  • 4 bone-in pork chops
  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese

  • Salt and pepper to taste
  • 2 tsp fresh thyme or rosemary, chopped

Instructions

  1. Preheat oven to 375°F (190°C) and grease a casserole dish.
  2. In a skillet, sauté chopped onions in olive oil over medium heat until translucent (about 5 minutes).
  3. Layer half of the sliced potatoes in the greased dish. Top with half of the onions and two pork chops. Repeat layers finishing with remaining potatoes.
  4. In a bowl, whisk together heavy cream, salt, pepper, garlic powder, and half of the cheese; pour over the layered dish. Sprinkle remaining cheese and fresh herbs on top.
  5. Bake uncovered for 45-50 minutes until bubbly and golden brown.
