  • ¾ cup granulated sugar
  • ¾ cup brown sugar, packed
  • 2 tsp ground cinnamon
  • ½ cup unsalted butter, softened (1 stick)
  • 1 large egg
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8 inch baking pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In another bowl, cream softened butter with granulated and brown sugars until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually fold in the dry ingredients until just mixed; avoid overmixing.
  6. In a small bowl, mix additional sugar with cinnamon for topping; sprinkle over the batter.
  7. Pour into the prepared pan and bake for 25-30 minutes until golden brown. Cool before cutting into squares.
