  • 2 cups unbleached all-purpose flour

  • 2 tsp onion powder
  • 2 tsp paprika

  • 1 tsp black pepper
  • Vegetable oil for frying (enough to fill the skillet about 1 inch)
  • Hot sauce (to taste)

Instructions

  1. Marinate chicken in buttermilk and hot sauce for at least 4 hours or overnight.
  2. In a separate bowl, whisk together flour, garlic powder, onion powder, paprika, salt, and pepper.
  3. Remove chicken from marinade; let excess liquid drip off. Dredge in seasoned flour until fully coated.
  4. Heat oil in a heavy skillet to 350°F (175°C). Test with bread; it should sizzle immediately.
  5. Fry chicken pieces for about 12-15 minutes per side until golden brown and an internal temperature of 165°F (75°C) is reached.
  6. Drain on paper towels or wire rack before serving.
