Instructions

  1. Preheat your oven to 350°F (175°C) and line muffin tins with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, ginger, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, cream softened butter with granulated sugar using an electric mixer until fluffy (about 3-4 minutes).
  4. Beat in the eggs one at a time followed by the spiced gin extract.
  5. Gradually add the dry mixture to the wet ingredients while alternating with milk; stir gently until just combined.
  6. Pour batter into prepared muffin tins about ¾ full. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Once cooled, decorate with icing sugar mixed with water or lemon juice.
