  • 1 cup sushi rice
  • 1 ¼ cups water
  • 1 lb large shrimp (peeled and deveined)
  • 2 tbsp Sriracha sauce (plus extra for drizzling)
  • 2 tbsp olive oil
  • 1 ripe avocado (diced)
  • 1 firm cucumber (diced)
  • 4 sheets nori (cut into squares)
  • 2 tbsp rice vinegar
  • 2 tbsp toasted sesame seeds

Instructions

  1. Rinse sushi rice under cold water until clear. Combine with water in a pot, bring to a boil, then simmer covered for 20 minutes until tender.
  2. In a bowl, toss shrimp with Sriracha. Heat olive oil in a pan over medium-high heat; sauté shrimp for 3-4 minutes until pink and opaque.
  3. Dice avocado and cucumber while shrimp cools.
  4. In small bowls or molds, layer sushi rice at the bottom, followed by cucumber, shrimp, and avocado.
  5. Carefully remove stacks onto plates. Sprinkle with sesame seeds and drizzle with additional Sriracha if desired.
