Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant. Add chopped spinach and cook until wilted (about 3-4 minutes). Remove from heat.
  3. In a large bowl, combine ground meat, sautéed spinach and garlic, breadcrumbs, Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix until just combined.
  4. Shape the mixture into golf ball-sized meatballs (yielding about 16-20).
  5. Place meatballs on the prepared baking sheet and bake for 20-25 minutes or until golden brown.
