  • 1 cup cherry preserves
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • Juice of 1 lime
  • 1/2 tsp black pepper
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Pat chicken thighs dry, season with salt and black pepper.
  2. In a bowl, whisk together cherry preserves, soy sauce, garlic, ginger, lime juice, and red pepper flakes.
  3. Marinate chicken thighs in the mixture for at least 30 minutes in the fridge.
  4. Heat oil in a skillet over medium-high heat; sear chicken thighs skin-side down until golden brown (5-7 minutes) then flip.
  5. Transfer chicken to an oven-safe dish and pour remaining marinade over them. Bake for 25-30 minutes until the internal temperature reaches 165°F (74°C).
  6. For the glaze, transfer sauce from the baking dish to a saucepan over medium heat; add cornstarch slurry and stir until thickened. Drizzle over chicken before serving.
