  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 3 cloves garlic, minced
  • 2 tbsp freshly squeezed lemon juice

  • ½ cup panko breadcrumbs
  • 1 tsp dried dill or oregano
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet, heat olive oil over medium heat, sauté garlic until fragrant (about 1 minute), then add spinach until wilted.
  3. Remove from heat, mix sautéed spinach with feta, panko, lemon juice, salt, pepper, and herbs in a bowl.

  5. Place stuffed fillets in the baking dish, drizzle with olive oil, season with salt and pepper. Bake for 20-25 minutes until flaky.
