  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 1/2 cup chopped onion
  • 1 tsp garlic powder
  • 1/2 cup ketchup
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1/4 cup brown sugar
  • 1 cup pineapple chunks (canned or fresh)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic powder, salt, and pepper. Mix until just combined.
  3. Form the mixture into small meatballs (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
  4. Bake for 20 minutes, flipping halfway through for even cooking.
  5. While the meatballs bake, whisk together ketchup, soy sauce, rice vinegar, brown sugar, and pineapple juice until smooth.
  6. Once baked, transfer meatballs to a skillet over medium heat and pour the sauce over them. Simmer for 5-10 minutes until slightly thickened.
  7. Fold in pineapple chunks during the last few minutes of cooking.
