  • 1 cup sliced almonds, toasted
  • 1/2 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 cup brown sugar
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Preheat oven to 400°F (200°C). Bake washed and pierced sweet potatoes for 45-60 minutes until tender.
  2. Scoop out cooled sweet potato flesh into a bowl. Mash with brown sugar, melted butter, milk, eggs, and vanilla until smooth.
  3. In another bowl, mix almonds, flour, brown sugar, cinnamon, and melted butter until crumbly.
  4. Spread the sweet potato mixture in a greased baking dish and top with streusel.
  5. Bake at 350°F (175°C) for 25-30 minutes until bubbly and golden.
