  • 2 cups fresh green beans, trimmed and cut
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a large bowl, toss the cubed sweet potatoes and green beans with olive oil, garlic powder, thyme, salt, and pepper until well coated.
  3. Spread the mixture evenly in the prepared baking dish. Bake for 25–30 minutes, or until sweet potatoes are fork-tender and slightly caramelized.
