  • 4 medium sweet potatoes (about 2 lbs), peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tbsp taco seasoning
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup low-sodium chicken or beef broth
  • 2 tbsp olive oil
  • ½ cup sour cream (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, warm olive oil. Add onion and bell pepper; sauté for about 5 minutes until softened.
  3. Increase heat slightly, add ground beef, and cook until browned (7-10 minutes). Stir in garlic and taco seasoning; cook for another minute.
  4. Layer half of the sweet potatoes in a baking dish, followed by half of the meat mixture. Repeat layers and pour broth over the top.
  5. Cover with foil and bake for 30 minutes. Remove foil and add cheese; bake for an additional 15 minutes until golden.
