  • 14 oz firm tofu, cubed
  • 2 tbsp coconut oil
  • 1/2 cup roasted cashews
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cups broccoli florets
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tsp fresh ginger, grated
  • 3 cloves garlic, minced
  • Juice of 1 lime

Instructions

  1. Press the tofu between paper towels to remove excess moisture, then cut into bite-sized cubes.
  2. Heat coconut oil in a large skillet over medium heat. Sauté the tofu until golden brown on all sides (about 8-10 minutes).
  3. Add garlic and ginger; cook for 1 minute until fragrant. Stir in the bell peppers and broccoli; cook until tender-crisp.
  4. In a small bowl, mix soy sauce, brown sugar, and lime juice. Pour over the tofu and veggies.
  5. Add cashews, stir gently, and simmer for 2-3 minutes to meld flavors.
  6. Serve hot over steamed rice or noodles.
