  • 3 medium zucchinis (sliced lengthwise into 1/8 inch strips)
  • 1 cup ricotta cheese (fresh)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 2 cups marinara sauce (store-bought or homemade)
  • ¼ cup fresh basil (chopped)
  • 2 tbsp olive oil
  • Salt and pepper (to taste)

Instructions

  1. Preheat oven to 375°F (190°C). Slice zucchinis lengthwise into thin strips.
  2. In a bowl, mix ricotta, mozzarella, parmesan, salt, pepper, and basil until creamy.
  3. Spread a thin layer of marinara sauce in the bottom of a baking dish. Place two tablespoons of cheese filling at one end of each zucchini strip and roll tightly.
  4. Arrange rolled zucchini seam-side down in the dish. Pour remaining marinara over the rolls and top with extra mozzarella if desired.
  5. Drizzle with olive oil, cover with foil, and bake for 25 minutes. Remove foil and bake for another 15 minutes until bubbly and golden brown.
