  • 9 lasagna noodles (traditional or no-boil)
  • 4 cups fresh tomatoes, chopped
  • 1 cup ricotta cheese (whole milk)
  • 3 cups shredded mozzarella cheese (whole milk)
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup fresh basil leaves, chopped
  • 4 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp dried oregano
  • 1 tsp dried thyme

Instructions

  1. Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant. Add chopped tomatoes, oregano, and thyme; cook until softened.
  3. In a bowl, mix ricotta cheese with salt, pepper, and basil until smooth.
  4. In a 9×13 inch baking dish, layer some tomato sauce at the bottom. Add noodles followed by the ricotta mixture and mozzarella cheese. Repeat layers until all ingredients are used.
  5. Top with remaining tomato sauce, mozzarella, and Parmesan cheese. Bake uncovered for 30-35 minutes or until golden brown and bubbly.
