  • 2 cups fresh spinach
  • 8 oz cream cheese (full-fat)
  • 3 cloves garlic (minced)
  • 1/4 cup toasted pine nuts
  • 2 tsp fresh thyme (chopped)
  • 2 tsp fresh rosemary (chopped)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add spinach until wilted. Mix in cream cheese and pine nuts.
  3. Butterfly the turkey breast on a cutting board to an even thickness. Season both sides with salt and pepper.
  4. Spread the spinach filling evenly, leaving an inch from the edges.
  5. Roll the turkey tightly from one end and secure it with kitchen twine.
  6. Place seam-side down on a parchment-lined baking sheet and roast for 45-55 minutes, or until internal temperature reaches 165°F (74°C).
  7. Let rest for 10 minutes before slicing.
