  • 4 large Russet potatoes
  • 4 tbsp unsalted butter
  • ½ cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 3 green onions, chopped
  • Salt and pepper to taste
  • ½ cup bacon bits (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Wash potatoes thoroughly and poke holes in them with a fork. Bake directly on the oven rack for 45-60 minutes, until tender.
  2. Allow potatoes to cool slightly, then cut in half lengthwise and scoop out most of the flesh into a bowl, leaving some inside for structure.
  3. Mash the scooped potato with butter, sour cream, salt, pepper, half the cheese, and green onions until smooth.
  4. Spoon the mixture back into potato skins. Top with remaining cheese and optional bacon bits.
  5. Place filled potatoes on a baking sheet and bake for an additional 15-20 minutes, until heated through and golden brown.
  6. Let cool briefly before serving; garnish with additional green onions if desired.
