Ingredients

Scale
  • 34 lbs chuck roast
  • 1 cup dry red wine
  • 1 cup low-sodium beef broth
  • 2 medium carrots, chopped
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep ingredients: Chop carrots and onions; mince garlic.
  2. Sear the meat: Heat olive oil in a Dutch oven over medium-high heat. Season chuck roast with salt and pepper, then brown on all sides.
  3. Add aromatics: Remove roast; sauté onions and garlic until soft. Deglaze with red wine, scraping browned bits from the pot.
  4. Combine & simmer: Return roast to pot with carrots, thyme, rosemary, and beef broth. Bring to a gentle simmer and cover tightly.
  5. Slow cook: Transfer to a preheated oven at 325°F (165°C) for 3-4 hours until fork-tender.
  6. Serve: Let rest before slicing against the grain; enjoy with potatoes or crusty bread.

Nutrition

Keywords: For added depth, you can substitute the red wine with a bold stout or use vegetable broth for a lighter flavor. Allow your roast to rest before slicing for juiciness.
