Zucchini Lasagna Roll Ups are a delightful twist on traditional lasagna, featuring fresh zucchini noodles filled with a creamy ricotta mixture, rich marinara sauce, and gooey melted cheese.   • 3 medium zucchinis (sliced lengthwise into 1/4 inch strips)
  • 1 cup whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups marinara sauce
  • 1/4 cup fresh basil leaves (chopped)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice zucchinis lengthwise and sprinkle with salt; let sit for 15 minutes to draw out moisture.
  3. In a bowl, mix ricotta, half the mozzarella, Parmesan, egg, garlic powder, salt, and pepper until creamy.
  4. Spread marinara sauce on the bottom of a baking dish. Spoon filling onto each zucchini slice and roll them up tightly.
  5. Place seam-side down in the dish; cover with remaining marinara sauce and mozzarella.
  6. Bake covered with foil for 25 minutes; then remove foil and bake for an additional 10-15 minutes until golden brown.
