  • 1 medium eggplant (about 1 lb), sliced into ½-inch rounds
  • 2 tbsp olive oil
  • 1 cup panko breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp dried oregano or Italian seasoning

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Sprinkle salt over eggplant slices and let sit for 20 minutes to draw out moisture.
  3. Rinse the slices under cold water and pat dry with paper towels.
  4. In a bowl, mix panko breadcrumbs, Parmesan, garlic powder, oregano, salt, and pepper. In another bowl, coat eggplant slices with olive oil.
  5. Dredge each slice in the breadcrumb mixture until fully coated and place on a parchment-lined baking sheet.
  6. Bake for 25-30 minutes, flipping halfway through until golden brown and crispy.
