  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh cilantro, chopped
  • ½ cup sweet corn (frozen or fresh)
  • ¼ cup red onion, finely chopped
  • 3 tbsp olive oil (extra virgin)
  • Juice of 2 limes
  • Salt & pepper to taste

Instructions

  1. Cook the pasta in boiling salted water until al dente. Drain and rinse under cold water.
  2. While the pasta cools, chop cherry tomatoes, cilantro, red onion, and any additional vegetables.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  4. In a large bowl, combine cooled pasta with chopped vegetables. Pour the dressing over the top and mix gently.
  5. Fold in sweet corn at the end to keep its crunchiness. Chill in the refrigerator for at least 30 minutes before serving.
