  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 8 oz Cool Whip, thawed
  • 1 package (3 oz) berry jello mix (strawberry or raspberry)
  • 2 cups fresh berries (strawberries, blueberries, or raspberries)

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter in a bowl. Press into the bottom of an 8×8 inch pan and bake for 10 minutes until golden brown. Cool completely.
  2. In a separate bowl, blend softened cream cheese with powdered sugar until smooth. Fold in half of the Cool Whip until fluffy.
  3. Spread the cream cheese mixture over the cooled crust evenly.
  4. Prepare jello mix as per package instructions, using slightly less water for firmness. Gently fold in fresh berries and pour over the cream cheese layer.
  5. Cover with plastic wrap and chill in the refrigerator for at least 4 hours or overnight.
