Beef birria is a flavorful Mexican dish that combines tender beef chuck roast simmered in a rich, spice-infused broth.   • 2 lbs beef chuck roast, cut into chunks
  • 4 guajillo chiles, stems and seeds removed
  • 1 medium sweet onion, chopped
  • 6 garlic cloves, minced
  • 2 tsp dried Mexican oregano
  • 1 tsp ground cumin
  • 3 bay leaves
  • 4 cups low-sodium beef broth
  • Juice of 2 limes
  • Fresh cilantro for garnish

Instructions

  1. 1. Season the chuck roast with salt and pepper.
  2. 2. Toast guajillo chiles in a dry skillet over medium heat for about 2 minutes until fragrant.
  3. 3. Blend toasted chiles, onion, garlic, oregano, cumin, bay leaves, and beef broth until smooth.
  4. 4. In a large pot, sear seasoned beef chunks in oil over medium-high heat until browned on all sides (about 4 minutes per side).
  5. 5. Pour the blended sauce over the seared meat. Bring to a boil, then reduce heat to low and simmer for at least 2 hours until the meat is fork-tender.
  6. 6. Stir in lime juice before serving hot with fresh cilantro sprinkled on top.
