Instructions

  1. Prepare your ingredients by chopping onion and garlic, and slicing mushrooms.
  2. Heat olive oil in a large skillet over medium heat. Add onions and garlic; sauté until fragrant (about 3-4 minutes).
  3. Season chicken breasts with salt and pepper; add to the skillet. Cook until browned on both sides (about 5-7 minutes).
  4. Stir in sliced mushrooms and dried thyme; cook until mushrooms release moisture (about 5 minutes).
  5. Add long-grain rice and chicken broth; bring to a gentle boil. Reduce heat to low, cover tightly, and simmer for 20 minutes.
  6. Once the liquid is absorbed and rice is fluffy, remove from heat. Let rest covered for another five minutes before fluffing with a fork. Garnish with parsley if desired.
