  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups low-sodium chicken broth
  • 1 cup shrimp (fresh or thawed)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Shred the rotisserie chicken into bite-sized pieces and set aside. Chop the bell peppers, onion, and garlic.
  2. In a large pot over medium heat, add olive oil and sauté the onion and garlic until translucent (3–4 minutes).
  3. Add sliced Andouille sausage and cook until browned (about 5 minutes).
  4. Stir in the long-grain rice and Cajun seasoning; toast for an additional 2 minutes while stirring.
  5. Pour in diced tomatoes and chicken broth; bring to a gentle simmer.
  6. Fold in the shredded chicken and shrimp; simmer uncovered until shrimp are pink (5–7 minutes).
