  • 12 oz penne or rigatoni pasta

  2. In a large skillet over medium heat, heat olive oil. Add sliced sausage and cook until browned on all sides (7-10 minutes).
  3. Add chopped onion and bell peppers; sauté until softened (about 5 minutes).
  4. Stir in minced garlic; cook until fragrant (30 seconds). Add diced tomatoes with their juices; simmer gently.
  5. Cook pasta according to package instructions until al dente. Reserve some pasta water before draining.
  6. Combine drained pasta with the sausage mixture in the skillet; toss over low heat for 2-3 minutes. Adjust consistency with reserved pasta water if desired.
  7. Serve hot with freshly grated Parmesan cheese on top.
