  • 1 lb flank steak
  • 2 tbsp extra virgin olive oil
  • 4 cloves fresh garlic, minced
  • 28 oz canned San Marzano tomatoes
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 tsp red pepper flakes (adjust to taste)
  • Salt & pepper to taste

Instructions

  1. Bring flank steak to room temperature and season both sides with salt and pepper.
  2. In a large skillet over medium-high heat, heat olive oil until shimmering. Sear the steak for 4-5 minutes per side until medium-rare. Remove and let rest.
  3. In the same pan, sauté minced garlic for about 30 seconds until fragrant.
  4. Add canned tomatoes with their juices, breaking them up as they cook. Stir in salt, pepper, and red pepper flakes.
  5. Simmer sauce for 10 minutes until thickened.
  6. Slice the rested steak against the grain and return it to the pan with sauce. Simmer briefly before serving hot over pasta or crusty bread.
