  • 2 red bell peppers, chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Chop the red bell peppers into strips and mince the garlic.
  2. Spread the chopped peppers on a baking sheet drizzled with 1 tablespoon of olive oil. Roast for about 15 minutes until tender.
  3. In a skillet over medium heat, add the remaining tablespoon of olive oil and sauté the minced garlic for about one minute until fragrant.
  4. Add the seasoned tilapia fillets to the skillet and cook for 3-4 minutes per side until opaque and flaking easily.
  5. Combine the roasted peppers with lemon juice in a blender. Blend until smooth but still slightly chunky.
  6. Serve the tilapia topped with the roasted pepper sauce and garnish with chopped parsley.
