Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly the turkey breast on a cutting board, slicing horizontally but not all the way through.
  3. In a bowl, mix spinach, sun-dried tomatoes, feta cheese, garlic, salt, pepper, and Herbs de Provence until well combined.
  4. Spread the filling evenly over the butterflied turkey breast.
  5. Roll the turkey tightly from one end and secure with kitchen twine or toothpicks.
