  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 2 tsp Cajun seasoning
  • 8 oz cream cheese
  • 4 cups low-sodium chicken broth
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup diced bell peppers (red or yellow)
  • 1 medium onion, diced
  • 1 cup corn (fresh or frozen)
  • Juice of 1 lime

  1. In a large pot over medium heat, add a splash of oil and sear the chicken until golden brown on both sides (about 5-6 minutes per side). Remove the chicken and set aside.
  2. In the same pot, sauté the diced onion and minced garlic until fragrant (about 3 minutes).
  3. Add the diced bell peppers, corn, and Cajun seasoning; cook until tender (about 5 minutes).
  4. Pour in the chicken broth and return the seared chicken to the pot. Simmer for about 15 minutes.
  5. Remove the chicken to shred it; stir in cream cheese until melted before adding the shredded chicken back into the mix.
  6. Finally, add white beans and lime juice; warm through for about 5 minutes before serving.
