  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 cans (28 oz each) San Marzano tomatoes
  • 12 tsp red pepper flakes (to taste)
  • 12 oz spaghetti or linguine
  • 2 tbsp olive oil
  • ¼ cup fresh basil, chopped
  • ½ cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper; cook until golden brown on both sides (6-8 mins). Remove and let rest.
  2. In the same skillet, sauté minced garlic until fragrant (1 min). Add San Marzano tomatoes and red pepper flakes; simmer for 15 minutes.
  3. Cook pasta in salted water until al dente; drain and reserve some pasta water.
  4. Slice chicken and return it to the sauce along with the cooked pasta. Mix well, adding reserved pasta water for desired consistency.
  5. Stir in chopped basil before serving and top with grated Parmesan.
