  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 ripe peaches, diced
  • 2 fresh jalapenos, finely chopped (seeds removed for less heat)
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients: dice peaches, chop jalapenos, and mince garlic.
  2. In a bowl, mix soy sauce, honey, lime juice, garlic, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  3. Heat olive oil in a skillet over medium-high heat; add marinated chicken and cook until golden brown (5-7 minutes per side) and reach an internal temperature of 165°F (75°C).
  4. Add remaining marinade with diced jalapenos and peaches to the skillet; simmer for about 5 minutes until thickened.
  5. Return chicken to the skillet, spoon sauce over it, and let simmer for an additional 5 minutes. Serve hot with extra sauce drizzled on top.
