  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup diced bell peppers (any color)
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by dicing onions, bell peppers, and mincing garlic.
  2. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until golden brown, about 3-4 minutes.
  3. Add the ground beef to the pot; cook until browned and crumbly.
  4. Stir in the diced bell peppers along with salt and pepper; sauté until softened (about 5 minutes).
  5. Mix in crushed tomatoes, kidney beans, black beans, chili powder, cumin, and additional spices if desired.
  6. Bring to a gentle boil then reduce heat to low. Cover and let simmer for at least 30 minutes.
