  • 1 tsp vanilla extract
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together flour, cocoa powder, baking powder, and salt in a bowl.
  3. In another bowl, beat melted butter and sugar until creamy. Add eggs one at a time and mix in vanilla.
  4. Gradually add dry ingredients to the wet mixture alternately with milk until just combined.
  5. Fill each cupcake liner about two-thirds full with batter and bake for 18–20 minutes until a toothpick comes out clean.
  6. Once cooled, cut out small cones from the center of each cupcake and fill with raspberry jam.
  7. Whip heavy cream until soft peaks form; gradually add powdered sugar and red food coloring if desired. Pipe onto cupcakes.
