  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 2 cups tortilla chips
  • 1 can (15 oz) black beans, drained and rinsed
  • ¼ cup fresh cilantro, chopped
  • ½ cup heavy cream
  • 2 tbsp fresh lime juice
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Season chicken breasts with salt and pepper. In a skillet over medium-high heat, add olive oil and sear the chicken until golden brown (4-5 minutes per side).
  3. In a bowl, mix salsa verde, heavy cream, lime juice, garlic powder, and cumin until smooth.
  4. Layer seared chicken in the baking dish. Pour sauce mixture over the chicken and sprinkle black beans followed by shredded cheeses on top.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is golden.
  6. Let cool slightly before garnishing with cilantro. Serve with tortilla chips or warm tortillas.
