  • 2 lbs pork shoulder, cut into bite-sized pieces
  • 4 fresh green chiles (mix of poblanos and jalapeños)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tsp ground cumin
  • Salt and pepper to taste
  • Water or broth (enough to cover the meat)

Instructions

  1. Prep your ingredients by chopping the pork shoulder, dicing onions, mincing garlic, and preparing the green chiles.
  2. In a large pot over medium heat, add oil and sauté onions until translucent (about 5 minutes). Add minced garlic for the last minute.
  3. Increase heat to medium-high; add pork shoulder cubes and brown all sides for 8-10 minutes.
  4. Stir in chopped green chiles, along with cumin, salt, and pepper; cook for another 5 minutes.
  5. Pour in enough water or broth to cover the mixture completely. Bring to a boil, then reduce heat to low and simmer uncovered for 1.5 to 2 hours until tender.
  6. Once fork-tender, stir in lime juice and cilantro. Adjust seasoning if needed before serving.
