Dutch Oven Lasagna Soup is a warm and comforting dish that transforms all the classic flavors of lasagna into a hearty soup.   • 2 tbsp extra virgin olive oil
  • 1 lb 80/20 ground beef
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 28 oz can crushed tomatoes (San Marzano recommended)
  • 4 cups low-sodium chicken broth
  • 8 oz uncooked lasagna noodles, broken into pieces
  • 2 cups shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Sauté onions and garlic until translucent (about 5 minutes).
  2. Add ground beef and cook until browned (6-8 minutes), breaking it up as it cooks.
  3. Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper. Simmer for 10 minutes.
  4. Add broken lasagna noodles and cook for another 10-12 minutes until noodles are tender yet al dente.
  5. Remove from heat; stir in half of the mozzarella until melted. Top with remaining cheese before serving hot.
