  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers, chopped (mixed colors)
  • 28 oz can crushed tomatoes
  • 15 oz can kidney beans, rinsed and drained
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, fresh cilantro

Instructions

  1. In a large pot over medium heat, sauté onions and bell peppers until soft.
  2. Add ground beef and cook until browned, breaking it apart as it cooks.
  3. Stir in minced garlic, chili powder, cumin, salt, and pepper; cook until fragrant.
  4. Add crushed tomatoes and rinsed beans; mix well.
  5. Reduce heat to low, cover the pot, and let simmer for at least 30 minutes.
  6. Serve hot with optional toppings.
