  • 3 lbs chuck roast
  • 1 packet ranch dressing mix (1 oz)
  • 1 packet au jus gravy mix (1 oz)
  • 6 whole pepperoncini peppers
  • 1 cup low-sodium beef broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Pat the chuck roast dry and season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides for 3-4 minutes until browned.
  3. In a slow cooker, layer half of the ranch and au jus mixes at the bottom. Place the seared roast on top and sprinkle with remaining mixes.
  4. Add pepperoncini and pour in beef broth.
  5. Set slow cooker to low for 8 hours or high for 4 hours.
  6. Once cooked, shred the beef in its juices using two forks and serve warm.
