  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh parsley, packed
  • 4 garlic cloves, minced
  • ¼ cup red wine vinegar
  • ½ cup extra virgin olive oil
  • ½ tsp red pepper flakes
  • Salt & pepper to taste

Instructions

  1. In a food processor, combine parsley, garlic, vinegar, olive oil, salt, pepper, and red pepper flakes. Pulse until finely chopped.
  2. Pat chicken breasts dry with paper towels and place in a bowl or resealable bag.
  3. Pour half of the chimichurri sauce over the chicken and marinate in the refrigerator for at least 30 minutes.
  4. Preheat grill to medium-high heat (400°F) or oven to 375°F (190°C).
  5. Grill or bake chicken for about 6-7 minutes per side until cooked through (internal temperature of 165°F).
  6. Drizzle remaining chimichurri sauce over the chicken before serving.
