  • 8 oz cream cheese (softened)

  • 2 large eggs (room temperature)

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl; press firmly into the bottom of a greased baking pan.
  2. In another bowl, beat cream cheese until smooth. Gradually add sugar until fluffy.
  3. Mix in sour cream, lemon juice, and zest until combined.
  4. Add eggs one at a time, mixing gently after each addition.
  5. Pour filling over crust and bake for 25-30 minutes until set around edges but slightly jiggly in center.
  6. Allow to cool completely at room temperature, then refrigerate for at least 2 hours before serving.
