  • 4 boneless, skinless chicken breasts (approx. 1.5 lbs)
  • 1/2 cup pure honey
  • 1/2 cup barbecue sauce (your favorite brand)
  • 1 tsp garlic powder
  • 1 cup long-grain or jasmine rice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Pat chicken breasts dry and season with salt and pepper.
  2. In a bowl, mix honey and barbecue sauce until well combined.
  3. Marinate chicken in half of the sauce for at least 30 minutes in the fridge.
  4. Heat olive oil in a skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side until golden brown and cooked through.
  5. While chicken cooks, rinse rice under cold water. Prepare according to package instructions.
  6. Brush cooked chicken with remaining marinade and serve over rice, drizzling pan juices on top.
